grilled cheese.


I have many comfort foods, some more guilty pleasures than others. Grilled cheese is somewhere near the top though. It’s warm and buttery and cheesy. It’s crispy and gooey and personal sized. This is my absolute favourite take on grilled cheese. It’s kind of fancy, kind of decadent, but mostly delicious.

-Sharp cheddar (I used 5yr. Balderson aged cheddar – using a good sharp cheddar is important to balance the flavours out. No Kraft singles here.)
-bacon bacon bacon (cooked to be nice and crispy)
-1 apple (peeled, cored, and diced)
-2 tps. brwon sugar


1. Start by making your caramelized apples. Melt about a tablespoon of butter in a frying pan and add the sugar and apples. Keep it a medium heat, and watch your apples carefully. You want them to be golden brown and for the sugar to start to get sticky and coat them. I didn’t get a candy thermometer out or anything, but they do need a watchful eye.

2. Slice your cheese (about a 1/4 inch thick) and break your bacon into pieces.

3. Now assemble your grilled cheese! Coat a slice of bread with butter or margarine and lay it on the frying pan (you will want to clean it if you’re using the same one you did your apples in). Next layer your cheese, bacon and carmaleized apples, and top it off with another slice of buttered bread.

4. Once your cheese is melted through, flip until golden brown on both slides.

5. Enjoy!

***You will have extra caramelized applies if you’re only making for 1, but think of all the possibilities. On ice cream! On granola! On a pizza! Or if you’re feeling decadent, by the spoonful!
